If you are looking for the perfect ingredients for your celebrations, the official Diamond Jubilee fruitcake and tea blend may be just what is required. To mark Her Majesty The Queen’s 60 years on the throne, the Royal Collection has commissioned a fruitcake from Fiona Cairns, the cake designer who made the wedding cake for The Duke and Duchess of Cambridge.
The Diamond Jubilee cake which is handmade to a traditional recipe, can be served alongside the Royal Collection’s Diamond Jubilee tea, specially blended for 2012. The tea caddy in which the blend is presented is designed to accompany the official range of Diamond Jubilee china, made exclusively for the Royal Collection. The range includes a tea cup and saucer, side plate, a limited-edition cake stand and limited-edition teapot.
Fiona Cairns is renowned for her fruitcake and produced an eight-tiered, handmade cake decorated with sugar flowers for The Duke and Duchess’s wedding on 29 April 2011. Her recipe for the Royal Collection is based on a traditional dark fruitcake, made with Lexia raisins, Vostizza currants, whole nuts and Napoleon brandy. The mixture is matured for three months before it is ready. Decorated with a red Buckingham Palace ribbon, the cake is topped with an iced crown created for the Royal Collection from a vintage army button.
